Thanksgiving Turkey Tips: When to Buy and How to Thaw Safely
URGENT UPDATE: As Thanksgiving approaches on November 23, 2023, many are wondering when to buy their turkey and how to safely prepare it. With just weeks to go, it’s crucial to know the best practices for purchasing and thawing your bird to ensure a delicious feast.
Food safety experts from the Minnesota Department of Health emphasize that if you plan to buy a fresh turkey, it’s best to wait until just one or two days before Thanksgiving. Store it in the refrigerator on a tray to catch any juices and avoid cross-contamination. However, if you’re opting for a frozen turkey, you can purchase it anytime, but ensure you allow adequate time for thawing.
According to the U.S. Food Safety and Inspection Service (FSIS), a frozen turkey can remain in the freezer indefinitely, but cooking it within a year is recommended for optimal quality. If you’re planning ahead, you could even buy a turkey after this Thanksgiving and freeze it for next year!
When it comes to thawing, the FSIS warns against leaving your turkey on the counter for extended periods. They state, “A package of frozen meat or poultry left thawing on the counter more than 2 hours is not at a safe temperature.” The danger zone for bacteria growth falls between 40 and 140 degrees Fahrenheit, which can jeopardize food safety.
Instead, consider these safe thawing methods:
1. **Refrigerator:** Ideal for slow and safe thawing.
2. **Cold Water:** Submerge the turkey in its packaging, changing the water every 30 minutes.
3. **Microwave Oven:** If your turkey fits, this method is quick but requires immediate cooking afterward.
How large is your turkey? This impacts how long you’ll need to thaw. A general guideline is that frozen turkeys take at least 50% longer to cook than thawed ones. If you forget to thaw, don’t panic! The FSIS reassures that frozen turkeys can still be cooked, just plan for the extra time.
