Beachwood Pizza Honors Late Chef with Limited-Time Menu
UPDATE: Beachwood Pizza & Beer is launching a limited-time menu in Huntington Beach, honoring the late Chef John Ash, a revered pioneer in Wine Country cuisine. Starting October 23 through November 2, this special menu will feature three innovative dishes inspired by Ash’s iconic cookbook, “From Earth to Table,” which celebrates sustainable cooking.
Chef John Ash, who passed away at the age of 83 in August, was a trailblazer known for championing local, seasonal ingredients and the exquisite wines of Sonoma County. His influence continues to resonate in the culinary world, inspiring chefs like Ashley Arias at Beachwood. “He was a man who used items that were in season all the time,” Arias said, emphasizing Ash’s commitment to quality ingredients.
The menu will feature the Earth To Table Sourdough Pizza, topped with Bechamel sauce, mozzarella, Dutch brie, Canadian bacon, portabella mushrooms, and caramelized onions. “It’s like putting a charcuterie board on a pizza,” Arias stated.
Another highlight is the wine-braised chicken Orecchiette, a savory dish with creamy chicken, herbed Shiitake mushrooms, sun-dried tomatoes, and parmesan. “It’s super herbie, super savory,” Arias described.
For dessert, diners can look forward to the Spiced Wine Poached Pear, a delightful treat poached in the same white wine Ash often recommended in his book. “It’s tender but still full of texture,” Arias added.
Beachwood owner Gabriel Gordon reflected on Ash’s profound influence in his life, stating, “John was the godfather of wine country cuisine and a huge influence on me growing up in Santa Rosa.”
This limited-time menu not only celebrates Ash’s legacy but also showcases Beachwood’s commitment to elevating local cuisine.
